I love to cook, not bake, cook. Cooking for my family makes me feel like I have a measure of control in their health and since I love them, I love to cook for them. Cleanup is always the worst, I clean as I go….but.

Recently we bought a Blackstone Culinary 3-Burner Liquid Propane Flat Top Grill (Model #1934) which is a 30″ cook surface with hood and a Pit Boss 600-sq in Black Pellet Grill (Model #PB600PS1). It is not my intention to review these items, just providing all the info.

I love cooking on these and since I live in south Georgia, I probably cook on them 20 times a month! Most importantly the cleanup is super easy…..yes!

Today we are making Chicken Amazing. You will need 2 large chicken breasts; 1 package of normal or thin sliced bacon any kind; small package of frozen creamed spinach defrosted; feta cheese; minced garlic (dried, frozen, fresh, doesn’t matter); seasoning you like, I used Cabella’s Maple Jalapeno; honey; 1 craft beer something fruity is my favorite and I used Sierra Nevada Wanderland Nectarine Ale and a small roasting pan.

After you have gathered all of your ingredients, preheat your oven or preferably smoker to 350 degrees. If you only have an oven, this will work, but if you have a convection option it would help a great deal. I am not an air fryer person, but you may be able to cook these with an air fryer.

Layout your bacon in any binding pattern, we don’t want any leaks if possible. Then slice your chicken breasts open leaving one side hinged for stuffing. Now the fun part, stuffing the chicken. Add a dollop of the creamed spinach, some minced garlic and some crumbled feta cheese… Don’t overfill it, resist the urge from the darkside as overfilling can result in dry meat. Close your chicken breasts up in your bacon basket. Use toothpicks if necessary, we really want awesome coverage to keep all those juices inside.

Next place your chickens on your broiling pan, you see I have a very small one, you really want the pan to fit your load for the best results. However, a regular sized broiling pan will work with extra beer. Once your chickens are arranged to allow airflow then we drizzle with honey and season again with the Cabella’s Maple Jalapeno. The honey is a crucial step, so cover it well. It creates a barrier to keep moisture in and gives the bacon a heavenly texture. Lastly, fill your broiling pan bottom with ample beer and put them on the fire!

You will want to cook these chicken breasts in the smoker for about 2 hours or until you have an internal temp of 180 degrees. They will be tender, flavorful and packed with protein, vitamins and love. You can easily make this a template recipe in your arsenal by switching up the ingredients….
