My son got me started on a Keto diet. I’m hypoglycemic, so I still eat naturally occurring sugars. I have to tell you, if you haven’t tried a Keto type diet…. You are struggling unnecessarily.
What I’ve found is the education from looking at the labels itself is a great benefit. I have learned for example to make crackers to replace my favorite Cheez-its that have ZERO carbs… In fact they are better tasting, have less salt and a ton of protein!
Want my recipe?
Equal parts of Almond flour & shredded cheddar cheese. Add garlic powder (NOT garlic salt) to taste. Add a carb free oil such as Coconut a little at a time until you get a dough like consistency. Next, break off small 1/2 inch balls of dough and put them on a cookie sheet (I use the silicone, so I don’t have to spray the sheet). Next get a small dish of water and a fork. Press the dough balls in a criss-cross pattern until they are like a quarter inch thin. It’s important to use the fork because you want these crunchy ridges =) Lastly, bake them in the oven at 300 degrees until they are browning up (about 20 minutes). Take them out, cool on the counter and although they should be shelf stable, I package mine and freeze them in portion containers.
I have made variations of this recipe, for example try adding chopped fresh spinach (fabulous!), chopped onions, flax seed meal… The possibilities are endless.
I didn’t loose much weight in the beginning, however, after a few months I sure am now!
